Hi there! Welcome to my first foodie blog! I began blogging just this past December, and I'm so loving it! I have been browsing so many women's food blogs, and I just seem to keep going and going and going -- the blogs are endless, which is mahvelous!!! I love checking out different recipes and the great deals they get on their groceries -- it's a veritable plethora of information --- AWESOME! So, I have decided to try my hand @ at this foodie blog thingy. I do have some experience in the recipe realm because I have made 3 family cookbooks for the past few Christmases. I really love different recipes and trying new things. Here, I will post my go-tos and newbies. Hope y'all enjoy!
By the way, tonight I made a go-to dinner of meatloaf, mashed potatoes, green beans, and corn muffins. I also made cole slaw for the first time, and it turned out pretty well!
Mom's Mah-velous Meatloaf
2 lb ground beef
1 envelope Lipton beefy onion soup mix
1 egg
Several dashes of Worcestershire sauce (I love the stuff, so I put LOTS!)
Approximately 3/4 cup Quaker oats (may use less or more to just bind together)
Mrs. Dash, a few shakes
Pepper, a few shakes
Onion (optional)
Bell pepper (optional)
Ketchup
In a large bowl, combine all ingredients except ketchup. Mix well and place in a 13 x 9 pan, shaping into a large oval shape (this is how my Mama did it, so I do, too =P). Using the small circular end of a wooden spatula, poke holes all in the meatloaf – this helps to ensure complete cooking but the holes all fill up during cooking. Then, liberally cover the top of the meatloaf with ketchup. Cook @ 350 for 45-50 minutes.
